Food waste in retail
Within the framework of the project “Situational analysis of food waste in distribution (out-of-home catering, retail) and with regard to consumer behaviour and interface consideration (SAVE)” funded by the Deutsche Bundesstiftung Umwelt, corsus has compiled and analysed the state of knowledge and gaps in knowledge, causes and reasons as well as measures and projects on food losses in food retailing. The focus was on stationary food retailing, bakeries and butchers’ shops. For this purpose, the results of studies already carried out are evaluated. In addition, information on projects to avoid food waste was researched on the Internet and discussions were held with representatives of the food retail trade, associations and the scientific community. Conclusions were drawn from this, particularly with regard to the need for research and clarification.
